Both the flowers and the vegetation of this wonderful herb deliver a pleasing aroma and smooth bitterness to beers. Heather was used prior to the use of hops in a fermented beverage known as gruit.  It is especially noted for a Scotch Ale known as Fraoch. With a flavor similar to a subtle chamomile/mint mixture with a note of lavender, heather compliments honey.  The cleaning of heather is strictly regulated to insure against a hallucinogenic fungus which naturally occurs and may further explain the use in early beer making.
